Our employer has changed our shift pattern, and says that instead of paying us for two days this month the money will be in our pay packet next month. I’m only on £7.50 an hour; can he withhold my money for so long?

I’m not sure exactly what has happened here, but it sounds as though your employer has moved your pay day forward by two days, leaving you a bit short this month. Although it may constitute a change to your employment contract it would probably be considered reasonable as long as you get your money eventually. The wages department may be prepared to give you a sub if the change is causing you difficulty.
